The Iberostar Group plans to use artificial intelligence in more than 100 hotels worldwide to reduce the abundance of food waste. The Iberostar Group will be using the Winnow System which will keep track of what food is being discarded using a camera and scale system. All of the data obtained through the AI will then be sent to the chef to indicate the overall cost, weight, and quantity of food that is being thrown away. This will then help the chef and kitchen staff determine what foods are consistently eaten and thrown away which will help the staff make improvements in what is being offered and decrease the high volume of food waste in the hotel industry.
