In Atlantic Canada, Greg Gerrits is frustrated after putting hundreds of thousands of dollars into the construction of a facility to help reduce food waste. The facility is hoping to process imperfect and surplus produce that Gerrits would not be able to sell for human consumption. The facility would then turn this excess food into powdered vegetables, dehydrated soup mixes, and dog treats.  “This plant alone, if I had known three years ago what kind of foolishness was gonna be, there’s no way we would have done it,” says Gerritts, who owns Elmridge Farm. Gerritts explains how all the local farmers are trying to fill a fresh market and if there is any surplus in Nova Scotia, there is nowhere for it to go.
