The Office of Sustainability at Susquehanna University has partnered with the dining services provider, Aramark, to address food waste by diverting it from landfills. Food waste generated from the university dining hall will be collected by the Aramark staff in buckets every day. This waste will be taken to the school’s garden, where students will compost the food. The resulting compost will be utilized to fertilize crops. The initiative aims to combat Pennsylvania’s problem, where 40% of waste is sent to landfills, contributing to methane emissions. The associate professor of English and chair of Susquehanna’s sustainability committee, Drew Hubbell, emphasizes that diverting food waste from landfills to composting will reduce greenhouse gas emissions and also aligns with circular economy principles.
