Greenwich businesses and institutions are reducing food waste through new practices to comply with Connecticut’s Commercial Organics Recycling Law effective earlier this year. What the law requires is for organic material to be separated and redirected from landfills to composting for institutions that are producing more than 26 tons of organic material annually. The entities targeted are wholesalers, manufacturers, hotels, and health care facilities. The law addresses the waste management crisis by reducing food waste by using 25,000-60,000 tons of food scraps. This law could significantly change the fiscal, environmental, and public health impacts of waste disposal as the Connecticut Department of Energy and Environmental Protection estimates.
