Massachusetts recently passed a ban on companies who produce more than half a ton of food waste a week from sending their waste to landfills or incinerators. Companies are turning toward anaerobic digesters as an environmentally friendly alternative to remove waste. Farms like Bar-Way Dairy take food waste, mix it with manure, and process it with microbes that produce methane or biological gas. This gas is then run through generators creating usable energy, essentially taking two waste products, manure and food waste, and turning them into energy for the community. Anaerobic digesters aren’t a new technology, but as food waste regulations like the one in Massachusetts pass, they become more financially viable and widespread.
