A new study shows repurposing food waste into sustainable alternatives. Around 2% of the 80 billion pounds of food is discarded each year in the United States because of food manufacturing and processing. Food waste directly into a general waste bin can release methane emissions, researchers are exploring ways to repurpose food processing waste into valuable products for the bioeconomy, such as sustainable fuels, biogas, electricity, chemicals, and organic fertilizers. The team is repurposing industrial food-processing waste products like potato peels, fried dough particles, and cheese whey to reduce greenhouse gas emissions and boost the bioeconomy, this process is known as valorization. It aligns with the goal of reducing food waste by 50% by 2030, contributing to both environmental sustainability and energy security.
