Two Mary Washington students on the rugby team worked together to start the business Mother’s Microgreens. They collect food waste from people around the city, compost it, and turn it into soil which they then use to grow microgreens. Microgreens are essentially salad greens, but they are much smaller and more concentrated in nutrients and flavor. The business started as the students growing microgreens for themselves, but they ended up partnered with Generation Compost and are looking to start selling to restaurants and other businesses. It is a very simple but effective way to use food waste to grow food and make a profit while doing so.
