Wang Yongxin, a principal in Central China, has been taking the phrase, “put your money where your mouth is” to a practical setting. Wang has taken to eating all of his meals including his daily calorie requirements from the leftover food his students are throwing away in an effort to reduce food waste and save money the school spends on that wasted food. A viral video from this week shows the principal eating his student’s thrown away leftovers in the cafeteria, bringing attention to how much food is wasted in school. As a result the students and teachers both have been noted to either eat less to as not waste any or to eat everything before throwing away. The video has increased discussion around the world about the importance of food waste and unique ways to approach reducing it. With the Chinese government outlawing Mukbanks, videos like Principle Wang eating leftovers might become the newest online food eating trend. Unique approaches to food waste not only open discussion around food waste, it can lead to new ways of reducing it.
