While some companies and educators combat food waste at the farms or grocery stores or even in households. Winnow is a company designing AI-powered technology to decrease food waste in kitchens. Winnow keeps track of food wasted in the kitchen without wasting the time of a chef or staff member inputting data. Winnow notes what is being wasted, when it is thrown away, and ways the kitchen can improve to reduce food waste.
Most commercial kitchens waste between 5%-15% of the food purchased. But with Winnow’s technology, 50% reduction in food waste has been achieved. Winnow kitchens are also reducing almost 62 million pounds of wasted food every year, which reduces greenhouse gas emissions and frees space in garbage dumps.
This innovative technology is already in the works at notable hospitality establishments, including Accor, Marriott, Hilton, Mandarin Oriental, and more. Winnow is able to keep up with these high-volume kitchens, which can definitely make them suitable for restaurants and university dining halls for future expansion.
