A team with “Trends in Food Science and Technology” found a way to convert agricultural byproducts into protein and nutrient-rich foods. The problem this team found was that agricultural residues are being underutilized or composted, though fungi has the ability to change that. With proper pre-treatment, this food waste could serve as feedstock for the mineral rich, protein substitute for meat that are mushrooms. They say consumer perception is the biggest problem with this, though younger consumers tend to be accepting of way to reduce food waste. I think this is a great discovery as the world is shifting into a more vegetarian landscape, paired with the fact that food waste can be put to good use this seems like significant progress.
